What’s For Supper


I really struggled this week to figure out what we would be having for supper – not sure exactly why but I couldn’t get past looking for quick and easy meals for next weeks meal plan.  Maybe it’s because my brain is still thinking life will be crazy because of teaching 3 nights a week?!?!?!  Who knows!  All I know is when you take the time to meal plan and prep it goes a long way on your pocket book and waist line!


Monday:  4 Cheese Spaghetti Squash & BBQ Pork Chops

This recipe calls for spaghetti but I will substitute with spaghetti squash for a healthier version



Tuesday: Cheesecake Factory Louisiana Chicken Pasta



Wednesday: Tator Tot Casserole

This has been a family favourite for years.  You can substitute the mushroom soup with plain greek yogurt if you so choose.  I use frozen green beens from the garden but you can use any type of veggie.



Thursday:  Instant Pot Lasagna Soup
